Fast alles muss weg

Trotz eisigen Temperaturen ist es Zeit für den ersten wichtigen Erziehungsschritt der Reben. Alle bis auf ein bis zwei Triebe werden weggeschnitten. So wird die Energie der Rebe gezielt ins optimale Wachstum geleitet. Im Schlosskeller reift indes der noch trübe Wein heran. In der Kälte bildet sich Weinstein, der auf natürliche Weise auf den Fassboden sinkt.

 

Cut by cut for quality

Despite icy temperatures, it is time for the first important cultivation step of the vine. All but one or two shoots are cut away. Thus, the vine’s energy is concentrated for optimum growth. In the meantime, the wine, which is still cloudy, matures in the castle cellar. Tartrate crystals are formed in the cold, which naturally sinks to the bottom of the barrel.


 

Wie die Hühner den Dreck

Wieso die abgeschnittenen Triebe heutzutage in kleinen Haufen im Rebberg zurückbleiben, ist nicht etwa Faulheit, sondern ein Ökologie-Aspekt. Die dürren Triebe werden später zerkleinert und zwischen den Reben verstreut. Dank unzähligen Bodenlebewesen entsteht daraus bald wieder nahrhafter Humus.

 

Untidy vineyard

The reason the cut off shoots are kept in small heaps in the vineyard nowadays is not laziness, but ecological. The dry shoots are later shredded and scattered between the vines. Thanks to innumerable living organisms in the soil, nutritional humus is produced again soon.


 

Rebenglut-Grillade

Getrocknet und zerkleinert, ergibt der jährliche Rebenschnitt eine ideale Glut zum Grillen mit unverkennbarem Geruch. Die Rebentriebe sind ein raschnach­wachsender Rohstoff und damit ein umweltschon­endes Recycling-Produkt. Wer es noch intensiver mag, für den gibt es sogar Räucherchips aus alten Rotweinfässern für ein besonders aromatisches Grillvergnügen.

 

The scent of a glow

Dried and crushed, the annual vine trimmings provides ideal embers for barbequing, an unmistakable scent altogether. The vine shoots are a rapidly regrowing raw material and therefore an environmentally friendly recycling product. For those who like it even more intense, wood flakes from old red wine barrels are sold on the internet for an aromatic barbecue experience.


 

Rebenglut-Romantik

25–30 Jahre ist die normale Lebensdauer von Rebstöcken, danach tragen sie nur noch spärlich Früchte und es ist Zeit für eine Neupflan­zung und Erneuerung der Drahtanlage. Aber von wegen ausgedient: Im Degustationsraum sorgen sie als Brennholz für wohlige Wärme und knisternde Romantik.

 

Glowing romance

The normal lifespan of grape vines is 25–30 years, after which they bear only sparse fruit and it is time for replanting and renewal of the wire frame. However, they still serve a purpose and provide firewood for cozy warmth and crackling romance in the tasting room for a long time.
